Recipes from Hydra

The island of Hydra excites all those who love the picturesque alleys, the recent history but also the good food. Stuffed squid with spinach and feta

Ingredients:

For the squid:

  • 8 large squid (fresh or frozen)
  • 2 cups. slice
  • 1 spoon dill (or fennel) chopped
  • 2 cups freshly sauteed spinach
  • 1 cup sour cream
  • 1/2 cup olive oil
  • 1 onion mashed
  • 1egg
  • 1 cup white dry wine
  • 1 pinch of nutmeg
  • 1 teaspoon black pepper
  • 1 teaspoon salt

For the sauce:

  • 1/2 cup extra virgin olive oil
  • 1 clove garlic mashed
  • 2 ripe tomatoes peeled and passed in the grater
  • 1 teaspoon sweet tomato paste
  • 1/2 teaspoon sweet. lemon zest
  • 1 cup fresh basil

    Implementation:

After washing well and cleaning the squid from the membranes inside, we let them drain. In a bowl, mix the cheese, nutmeg, dill (or fennel), spinach, pepper and salt. Fill the squid with this mixture and close it with toothpicks so that it does not open.

Put half a teaspoon of olive oil and the chopped onion in a saucepan. Saute for 1-2 minutes until the onion is shiny and then add the squid. Then add the wine. Cover and simmer for about 20 minutes. Remove the squid from the pot and keep them warm. Add the olive oil to the squid sauce and add the garlic, tomato and pulp dissolved in a cup of lukewarm water. Simmer for another 5-6 minutes.

Finally add the fresh chopped basil.

Put the squid back in the pot with the sauce and let them boil for just a while.

Serve the squid with their sauce and garnish with plenty of fresh basil and lemon zest.

 

Pear-shaped macaroons

Ingredients:

  • 1 kg of cleaned almond kernels
  • 1/2 cup of fine semolina
  • 1/2 kilos of granulated sugar
  • 1/2 cup of rose water
  • powdered sugar for sprinkling

Implementation:

Grind the peeled almonds in the blender.
In a large bowl, mix the almond kernels, sugar, semolina and rose water. After mixing them very well with our hands, we shape small pears.

Lay non-stick paper on a baking sheet, place the pears and bake for 15 minutes at 180 degrees. Once they acquire a golden color, we take them out of the oven. Let them cool for about 4 hours. Finally, sprinkle with rose water and sprinkle with powdered sugar.
